Taking A Break

Hi blog world.  Sorry it has been a while since my last post.  Life quickly got out of control.  I will be taking a break from chrissymitz.com for a little while cause I am going to have a baby.  Life until November 4, 2010 is going to be crazy.  I will be focusing all my time on 2 other websites/blogs trying to keep people up to date and documenting more crafts.  Stay in touch by visiting me at my two other sites for now.

Done Wrapping Gifts

I just finished wrapping my last Christmas gift…well at least until I get to CA in a few weeks.  We decided this year that it would be best to pack up the gifts and take them with us on the plane.  Southwest doesn’t charge for luggage so we can save a lot.  I thought ahead and used tulle as ribbon so the gifts wont need much fluffing.  The down size is that all our gifts have to fit in suitcases.  I finished the puzzle this morning and this is what I came up with.

The Best Banana Bread

So in my journey to eat well I am always searching for new recipes that are healthy replacements to my favorites.  A friend gave me this recipe for banana bread that uses applesauce to keep it moist.  The bread can be stored in the fridge for a yummy snack at any time of the day.  ENJOY!

2 ½ cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 cup sugar
3 egg whites (you can also use egg beaters)
½ cup applesauce
4 large rip bananas (mashed)
1 tsp vanilla
Dash of nutmeg

Preheat oven to 350.  Spray loaf pan with cooking spray.  Wisk together applesauce, sugar, banana, eggs, and vanilla.  Gently blend in flour baking powder, baking soda, cinnamon, and nutmeg.  Pour batter into pan and bake 50-60 minutes.  Due to the moist ingredients the toothpick test may not come out clean.  Be cautious to not over bake.  Cool completely before slicing (if you can wait that long).
